Pork hock terrine, with marinated prunes, pickled pear, toasted bun

White River veal saltimbocca, tempura veal sweet bread, wilted spinach, cherry tomato vinaigrette

Pan fried barramundi with fennel and barley risotto, herb butter, petit veg, caviar beurre blanc
